Instructions

1. Preheat oven to 200°F.
2. Slice liver into 4 oz slices (4 servings per pound).
3. Bring water to a boil in large kettle.
4. Drop liver into boiling water in batches to scald & seal in juices - remove from water & drain excess.
5. Lightly dip liver pieces in four mixed with salt.
6. Preheat pan & spray well with nonstick spray - add oil.
7. Add floured liver slices & brown, turning over to brown both sides - add more nonstick spray as needed.
8. Add onions & brown slightly.
9. Transfer to greased or lined hotel pan.
10. Add small amount of water to liver & onions to keep moist & tender.
11. Cover with foil & place in oven to keep hot until serving.
