Instructions

Day Prior to Serving
1. Mix together all ingredients except for meat.
2. Pour part of marinade in bottom of pan & place layer of meat over marinade.
3. Pour remaining marinade on top of meat.
4. Cover & refrigerate.
Day of Service
1. In the morning, turn pieces of meat to ensure marinade has soaked all parts of the meat.
2. Preheat oven to 350°F.
3. Bake for 30 minutes.
4. Layer cooked meat in hotel pan with 1/2-1 cup water to keep meat moist.
5. Cover hotel pan with foil & bake for additional 30 minutes until tender & reaches 155°F.
6. Transfer to steam table & serve.
