Instructions

1. Cook fresh chicken or turkey without salt, cool, & dice - or purchase unseasoned, diced poultry.
2. Melt margarine & remove from heat.
3. Add four & salt - stir until smooth with a wire whisk, adding a little of the milk to make a thin paste.
4. Bring to a simmer & cook for 2 minutes, stirring constantly.
5. Heat the remaining milk in the microwave or double boiler.
6. Add hot milk to cooked mixture with a wire whisk- cook & stir as necessary until smooth, simmering, & thick.
7. Add onions, pimentos (diced & drained), & turkey - heat to 165°F & serve.

Notes

**If green onions not available, can substitute white or yellow onion - or 1/2 the measure of chopped, dehydrated onions.
