Instructions

Day Prior to Serving
1. Mix together all ingredients except chicken.
2. Pour part of marinade in bottom of pan or zip lock - place chicken on marinade.
3. Pour remaining marinade on top of chicken - cover & refrigerate overnight.
Day of Serving
1. In the morning - turn chicken pieces over to ensure marinade has saturated all parts.
2. Preheat oven to 325°F
3. Place chicken on greased baking pan.
4. Bake for 30 minutes,
5. Layer cooked chicken in hotel pan - adding 1/2-1 cup water per pan to keep chicken from drying out.
6. Cover hotel pan with foil & bake for additional 30 minutes until tender.
7. Transfer to steam table for service.

Notes

**May substitute dry orange peel for fresh orange peel.
