Instructions

**Can substitute oregano for thyme
1. Wash & prepare vegetables.
2. In a large saucepan, sauté onion in oil over medium high heat.
3. Add lentils, water, salt, pepper, cumin, thyme, & bay leaves - bring to a boil.
4. Lower heat to medium low - cover & simmer for 30 minutes, stirring occasionally.
5. Add green chilies, red bell pepper, & carrots - simmer for 15 more minutes or until lentils are vey soft.
6. Remove & discard bay leaves.
7. Stir in lime juice & serve.

Notes

Food Handling :
- Wash hands immediately before engaging in food preparation and again
after engaging in any activities that contaminate the hands.
- Single gloves should be used for only one task and then discarded.
Cooking :
- Cook to an internal temperature of 165 F for 15 seconds.
Holding :
- Hold for hot service at an internal temperature of 135 F or higher.
