Instructions

1. Preheat oven to 350°F (or convection oven to 300°F).
2. Layer chicken breasts in hotel pan.
3. Bake in convection oven for 30-45 minutes or regular oven for 1 hour until reaches 165°F.
4. Take chicken out of oven & pour off any juice - reserve.
5. Use chicken juice as part of measure for water & add juice/water to butter & dijon mustard - thicken with cornstarch by string & bringing to a boil for 2 minutes.
6. Pour over cooked chicken breasts & place cheese over top - cover.
7. Return to oven or place in hotel for 5 minutes until cheese melts.
