Beef roast, bottom round, raw lean 1/8"trim
BBQ sauce, original

1. Preheat oven to 350°F.
2. Slice cold beef into 3 oz portions & arrange overlapping in counter pans (25 servings per pan).
3. Pour 1 cup water in each hotel pan.
4. Drizzle BBQ sauce over beef.
5. Cover pans with foil & bake for 45 minutes to 1 hour until beef is tender & reaches 165°F.
**Each pound of lean roast will yield approximately 3/4# of roast beef.
**Roast beef slowly to internal temperature 155°F - cool to 41°F within 4 hours unless roasted & used the same day.
