Instructions

1. Sauté onion & celery in butter until tender - add broth & baking soda
2. Combine cornstarch & water until smooth - gradually add to pan
3. Bring to a boil & cook stirring constantly for 2 minutes or until thickened
4. Reduce heat - add sauerkraut, cream, & corned beef
5. Simmer & stir for 15 minutes
6. Add cheese - heat until melted
7. Add salt & pepper to taste - garnish with rye croutons (optional)

Notes

Food Handling :
- Wash hands immediately before engaging in food preparation and again

Cooking :
- Cook to an internal temperature of 165 F for 15 seconds.
Holding :
- Hold for hot service at an internal temperature of 135 F or higher.
