Instructions
**Order boneless pork chops or cutlets - cut into ~4 oz each
1. Preheat oven to 350°F.
2. Mix first measure of four & pepper.
3. Dredge cutlets in the four/pepper mixture.
4. Place in a single layer on sheet pans.
5. Bake for 15 minutes or until brown.
6. Remove cutlets from oven & arrange in counter pans.
7. Prepare celery white sauce - sauté celery in margarine; stir in second measure of four & cook until a bubbly paste forms; heat milk
& slowly add to the paste, stirring constantly until a cream soup consistency.
8. Pour celery white sauce evenly over cutlets - cover pans with foil.
9. Bake for 1 hour or until tender.
Notes
Food Handling :
- Wash hands immediately before engaging in food preparation and again
after engaging in any activities that contaminate the hands.
- Single gloves should be used for only one task and then discarded.
Cooking :
- Cook to an internal temperature of 155 F for 15 seconds.
Holding :
- Hold for hot service at an internal temperature of 135 F or higher.
