Instructions

1. Drain canned potatoes & dice.
2. Make white sauce - melt margarine in pot, remove from heat. Add flour & salt. Stir until smooth with wire whisk, adding about 1/4 of the milk. Bring to a simmer & cook 2 minutes, stirring occasionally. Heat the rest of the milk in the microwave or a double boiler. Add hot milk to cooked mixture with a wire whisk. Cook & stir as necessary until smooth, simmering, & thick.
3. Add to 2 1/2 cups hot white sauce (about 1/4 cup per serving).
4. Bring to a simmer, stirring often.

Notes

**Weight potatoes after draining; or each 2 cups of drained liquids = 1 pound & can be subtracted from canned weight
**Fresh potatoes can be used; 15 pounds = about 10 pounds canned potatoes
-If fresh potatoes are used, boil with 1/2 tsp salt per 10 servings
