Instructions

1. Make mashed potatoes - may be made from fresh potatoes cooked without salt. Need 2 cups cooked.
2. Place mashed potatoes in a mixing bowl.
3. Boil large pot of water.
4. Add eggs, salt, baking powder, & flour. Mix gradually until batter is ready to form.
5. Form approximately 3+ tablespoon dough (or scant #16 scoop) into logs about the shape of a 3-4 inch hot dog.
6. Drop dumplings in boiling water & cover for 20-30 minutes.
7. Serve 1 dumpling per serving.
