Instructions

1. Preheat oven to 325°F.
2. Dice onions & place on bottom of pan.
3. Place beef roast on top of onions.
4. Spread tomato paste over the roast - covering top & sides.
5. Sprinkle top of roast with pepper.
6. Mix remaining ingredients & pour over top of tomato paste on roast.
7. Cook in oven until beef roast reaches at least 155°F & meat is tender.
8. Let sit 10-15 minutes before slicing.
9. Serve 3 oz beef & 1/4 cup onion-tomato mixture per serving.

Notes

**A 3 pound roast will take about 3 hours - add 40-60 minutes per pound above 3 pounds.

** May cook roast the day before.
