Instructions

1. Bring water to a boil.
2. Add brown rice, stir & slowly simmer, covered, until tender - about 45 minutes.
3. Preheat oven to 300°F.
4. Chop onions & green peppers.
5. Brown hamburger & onions together.
6. Add tomato puree & green peppers.
7. Mix with cooked rice & place in hotel pans - cover with foil.
8. Bake for 1 hour.
9. Serve 1 1/3 cup per serving.

Notes

**Can substitute frozen green peas if participants do not like green peppers
