Instructions
1. Preheat oven to 350°F.
2. Scrub & cut up potatoes, leaving skins on.
3. Pour 1 cup olive oil on each full cookie sheet used.
4. Spread potatoes onto cookie sheets in a single layer.
5. Bake for 1 hour - do not str.
6. Check to see if potatoes are done, if not done - cook for an additional 10 minutes.
7. Turn oven temperature down to 200°F & hot hold until ready to serve.
8. Sprinkle parsley on potatoes just before serving.
Notes
Food Handling :
