Instructions
1. Cut pork into cubes; wash & prepare vegetables.
2. Brown pork cubes in oil - drain well.
3. Drain pineapple, reserving juice.
4. Add pineapple juice, first measure of water, chicken base, vinegar, brown sugar, & tomato paste to pork - bring to a boil, reduce
heat & simmer, covered, for 30 minutes.
5. Add sliced carrots - cover & simmer additional 15 minutes (5 minutes if using canned or frozen carrots).
6. Add green peppers & celery - simmer another 5 minutes.
7. Whip cornstarch & second measure of cold water until smooth.
8. Stir pineapple & cornstarch into pork - cook 6-8 minutes, stirring often, until sauce begins to thicken.
Notes
Food Handling :
- Wash hands immediately before engaging in food preparation and again
after engaging in any activities that contaminate the hands.
- Single gloves should be used for only one task and then discarded.
Cooking :
- Cook to an internal temperature of 155 F for 15 seconds.
Holding :
- Hold for hot service at an internal temperature of 135 F or higher.
