Instructions

1. Wash & prepare vegetables.
2. Sauté carrots, onion, & celery in oil until just beginning to brown.
3. Add split peas & broth - bring to a boil, then cover & reduce heat to low.
4. Simmer until peas are soft, about 45-60 minutes or longer.

Notes

Food Handling :
- Wash hands immediately before engaging in food preparation and again
after engaging in any activities that contaminate the hands.
- Single gloves should be used for only one task and then discarded.
Cooking :
- Cook to an internal temperature of 165 F for 15 seconds.
Holding :
- Hold for hot service at an internal temperature of 135 F or higher.
